Hubby’s Favorite Banana Split Cake

Ingredients
4 cups crushed graham crackers
3 sticks butter, room temperature
2 eggs
16 -ounce box powdered sugar
1 or 2 pints of strawberries depending on your tastes
3-4 bananas, sliced
12 -ounce container whipped topping

**OPTIONAL** This cake is VERY sweet, if you make it as is.  I use 1  or 2 (8 oz) packages of cream cheese to cut the sweetness a bit.

Preheat oven to 350 degrees F.

For crust, mix crushed graham crackers and 1 stick of butter. Line bottom and sides of a 13 by 9-inch pan with mixture. Bake crust for 5 to 8 minutes.

Beat the eggs, 2 sticks butter, and the powdered sugar until fluffy. Spread mixture on cooled crust. Add layer of strawberries and layer of sliced bananas. Cover with whipped topping and sprinkle with nuts or graham crackers and add a few banana slices to the top and any additional strawberry juice. Refrigerate for 1 hour.

  5. I will want to try and make this but with Stevia sugar since my Teddy Bear is diabetic! Yummy!

    • Kristinia, please let me know how it turns out using the Stevia! My dad is diabetic also, and LOVES this dessert. If it tastes as good with the Stevia… I’d love to give it a shot.

    • Diabetic is for sure!! That’s why I highly suggest using the cream cheese. It is a VERY RICH dessert if you don’t use the cream cheese to cut the sweetness. (It’s almost too sweet even for my kids to eat without it, but still OH SO GOOD!!

    This does look delicious! Like you, I would teak it a little, though, with less sugar (is that correct in recipe? a whole pound of sugar?), and use cream cheese. Also, I wonder if I could sub something (maybe animal crackers or arrowroot?) for the graham crackers, I just never liked them.
